-Black truffle (Tuber melanosporum): it is the most valued and well-known truffle in Europe. It has black skin with warts and black flesh with white veins. Its aroma is intense, sweet and fruity, with notes of earth and moss. It is used in haute cuisine dishes such as pasta, meats and cheeses.

-White truffle (Tuber magnatum): it is the most expensive and rare truffle. It has light brown skin and white flesh with white veins. Its aroma is intense and delicate, with notes of garlic, cheese and honey. It is used raw in dishes such as carpaccio, salads and risotto.

-Summer truffle (Tuber aestivum): it is the most common and cheapest truffle. It has black skin with warts and brown meat streaked with white. Its aroma is less intense than that of the black truffle and has notes of almond and cocoa. It is used in dishes such as eggs, rice, and pasta.

-Winter truffle (Tuber brumale): it is similar to the black truffle but its aroma is less intense and has notes of earth and mushroom. It is used in dishes such as soups, stews, and potatoes.

Truffle Pasta Sauce: For this recipe you will need pasta, heavy cream, garlic, grated Parmesan cheese, and grated truffle.

The pasta is cooked in boiling water until al dente. Meanwhile, prepare the truffle sauce. The minced garlic is sautéed in olive oil until golden, then the heavy cream and grated truffle are added. Let it simmer until the sauce has reduced and thickened a bit. Add the grated Parmesan cheese and mix well. The pasta is served hot with the truffle sauce on top.

Beef fillet with truffle sauce: for this recipe you will need beef fillets, olive oil, salt, pepper, garlic, meat broth, liquid cream and grated truffle.

The fillets are seasoned with salt and pepper, then seared in hot olive oil until golden brown on both sides. They withdraw from the fire and reserve. In the same pan, sauté the minced garlic and add the meat broth and liquid cream. Let it reduce over low heat until the sauce thickens, then add the grated truffle and mix well. The sauce is served over the beef steaks.

To make a delicious truffle risotto, first heat chicken or vegetable broth in a medium saucepan. In another large pot, heat the olive oil and half the butter over medium heat and add the onion and garlic. Cook until transparent and add the Arborio rice. Mix well and add the white wine. Cook until the wine has evaporated. Add 1/2 cup of the hot broth to the rice and mix constantly until absorbed. Repeat this process until the rice is cooked, but still firm when you bite into it (approximately 20-25 minutes). Then, add the grated or finely chopped black truffle and mix well. Add the rest of the butter and grated Parmesan cheese and mix until incorporated. If the risotto is too thick, add more hot broth until it reaches the desired consistency. Season with salt and pepper to taste and serve hot. Garnish with some grated or chopped black truffle to enjoy its delicious flavor.

Truffle and Egg Pizza: For this recipe you will need pizza dough, tomato sauce, mozzarella cheese, egg, truffle oil, salt and pepper. Next, add the truffle paste or chopped truffles and foie gras to the sauce, and stir until well combined. Add the Madeira wine to the sauce and continue stirring until thickened and slightly reduced.
