In sausages the tinaja have managed to combine both things. The best deer of the hunting reserve montes universales , bred in a totally wild and feeding on the wild pastures of the Sierra de Albarracín.
In this way you get a meat very rich in protein and minerals and almost total absence of fat.
If we combine this raw material with the exceptional climate that we have in Bronchales (1573 meters of altitude) with very cold and dry winters and mild summers, the sausage obtained is of a unique quality to the palate.
