In this recipe, we'll start by preparing the mashed potatoes. To do this, peel the potatoes and onions and cut them into pieces. Also, we cut the leek. Add the 3 ingredients to a pot with a little salt, and cover with water. Let it cook for about 25 minutes.
When it is cooked, remove the pot from the heat, remove the water and, with a blender or a fork, begin to grind the ingredients. To the purée, we add the cream, the nutmeg, the pepper and a pinch of salt. Mix it well so that the mixture is homogeneous and rectify the flavor until it is to your liking. Reserve the purée.
We will continue preparing the duck confit. Put the confits on a baking sheet and sprinkle a little sugar on top. Put them in the oven, previously heated to 195ºC, until the skin is golden and crispy.
Finally, all that remains is to place them on the plate. At the base of the plate, put a portion of mashed potato in the center; on top, place the duck confit. To finish, add the red fruit sauce on top. He already has it! A dish full of opposite flavors, of different textures, that becomes a delicacy.
