We are getting closer to the start of autumn on the 24th and leaving summer and holidays behind. The time has come when we need to cover ourselves with a blanket when we are relaxing on the sofa, take out our jumpers and start drinking hot coffee for breakfast.

In a few days we will see how the leaves start to fall from the trees and the day is getting shorter and shorter and the night is gaining more hours of presence. This is one of our favourite seasons, everything is dyed in orange and brown tones and we crave more hot food dishes.

During this season, the markets are filled with fresh and nutrient-rich products, which make this season one of the favourites for lovers of good food.

The autumn truffle

The autumn seasonal truffle is one of the most coveted ingredients in haute cuisine. This underground fungus, scientifically known as Tuber Uncinatum, is characterized by having an intense aroma and earthy flavor, especially intended for the preparation of gourmet dishes. Truffles grow in symbiosis with the roots of certain trees, such as holm oaks and oaks, and are collected with the help of trained dogs, which increases their value and exclusivity.

This truffle has a softer and sweeter flavor compared to its relative, the black winter truffle, making it perfect for autumn dishes. It can be sliced ​​on pasta, risottos, eggs or even used in flavored oils and butters.

Seasonal sturgeon caviar is another luxury product that reaches its maximum ripeness in autumn.

Our caviar, made from sturgeon roe, also comes from Sarrión, where the sturgeon enjoys a high quality of life swimming in spring waters, providing the caviar with a multitude of mineral salts. Although it can be enjoyed throughout the year, it is in the autumn months when caviar reaches its best quality due to the optimal water conditions and the diet of the fish.

Autumn caviar usually has a more pronounced flavour and a firmer texture, making it the perfect complement to canapés, blinis and seafood dishes. In addition, its high content of protein, omega-3 fatty acids and vitamins A and D make it a very interesting option for our diet.

Preserve vegetables

We have a multitude of canned vegetables, ideal for starting the autumn season and eating something hot that doesn't require too much effort to prepare during the week. A practical format that allows us to have the vegetables ready to eat at any time and place, as well as preserving all the juiciness of freshly cooked vegetables.
