Shrimp and Apricot Salad

Ingredients:

  • 200g red shrimp
  • 4 apricots
  • 1 splash of lime juice
  • 200g spinach
  • 3 tablespoons orange juice
  • 4 tablespoons olive oil
  • 1 teaspoon honey
  • 1 pinch of salt
  • 200g mini spring onions

Let's start with the preparation:

  1. Peel the shrimp, leaving the last part and the tail.
  2. Wash the apricots, remove the pits, and cut them into small pieces.
  3. Place the lamb's lettuce in a salad bowl and top with the shrimp and apricot pieces.
  4. Wash the spring onions, sauté them with a little oil, and add them to the salad bowl.
  5. In a small glass, mix the honey with the lime and orange juice, a pinch of salt, and a splash of oil.

APRICOT TART

Ingredients:

  • 185g flour
  • 160g butter
  • 140g sugar
  • 60ml milk
  • 3 eggs
  • 12 apricots
  • 2 teaspoons brown sugar
  • 1/2 teaspoon baking soda
  • 1 pinch salt

Let's begin:

  1. Beat the eggs until the batter is whitish and add sugar. Next, add the butter and continue beating until the ingredients are well combined.
  2. Next, add the milk and mix well.
  3. Sprinkle the flour over the batter, add a pinch of salt and the baking soda.
  4. Prepare the pan and line it with baking paper. Pour the batter into it.
  5. Wash and dry the apricots. Cut them in half and then into pieces to place throughout the tart.
  6. Preheat the oven to 180°C (350°F) and bake for approximately 25 minutes. Once this time has passed, remove the tart and sprinkle brown sugar on top, then bake again for approximately 20 minutes.
  7. Remove from the oven and let it cool.
