What do we need to prepare a truffle mayonnaise?

  • 1 egg
  • Salt
  • 200 ml of olive oil
  • 1 Black Truffle
  • 1 teaspoon of lemon juice or vinegar
  • Grater or mandolin slicer
  • An electric mixer (blender)

How to make truffled mayonnaise at home

If you want to get started as soon as possible, we are going to give you some tips so that you can make your truffle mayonnaise in a second.

It goes without saying that you can also make mayonnaise in a mortar by mixing, but we are going to give you the easy recipe.

Let's start:

  1. The first thing you should keep in mind is to find a tall container, in which the mixer arm fits well without splashing, a cylindrical container is ideal.
  2. To start, add the egg into the container and add salt and a splash of lemon juice. If you wish, instead of lemon juice you can add a splash of balsamic vinegar to enhance its flavor.
  3. Add a generous splash of olive oil (or sunflower oil, depending on the budget) and beat everything well until a creamy texture is achieved. The trick is not to move the blender until the oil begins to emulsify. You must remain steady and, when you see that a sauce is beginning to form, gently and gently move the blender upwards so that the entire sauce achieves the same texture.
  4. Next, we grate a good amount of truffle and add it along with the mixture. We continue to blend and in a few minutes we have a delicious truffle mayonnaise that we can taste to adjust the salt or add more truffle.
