PREPARATION OF DEER SAUSAGE
The preparation of the venison salami follows the same guidelines as the preparation of the common or traditional salami.
Lean deer is used combined with lean pork and pork belly, to give it more juiciness. In addition to using spices, dyes and skimmed soy milk.
