What is a ham mallet?

The maza de ham is one of the two main parts of the ham, specifically from the hind leg of the pig. It is the largest and meatiest portion of the ham, which is opposite the contramaza. The maza is known for being the juiciest and tastiest part of the ham.

The maza is characterized by having a greater infiltration of fat between the muscle fibers, which gives it a tender and juicy texture. This intramuscular fat, known as marbling, contributes to the flavor and juiciness of the ham. In addition, the mallet tends to have a more rounded and wide shape, which makes it easier to handle and cut.

In hand-cut ham, the mallet is the main part of the piece used to obtain thin slices and juicy.
