  • 1 ripe melon (a piel de sapo melon)
  • 100g thinly sliced Iberian or Serrano ham
  • Natural yogurt
  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation:

  1. Prepare the melon: Peel the melon, remove the seeds, and cut it into small pieces.
  2. Blend: Place the melon in a blender and blend until smooth. You can add the yogurt at this point, which will add a little more body to the soup.
  3. Adjust the flavor: Season with salt and pepper to taste. If desired, add a few fresh mint leaves for an even more refreshing touch.
  4. Lightly cook the ham: To give it that extra touch of flavor, fry the ham for a few minutes until toasted, to enhance its flavor, then slice it and add it to the blender so everything is combined (we recommend saving some ham for presentation).
  5. To serve: Pour the soup into individual bowls or glasses and garnish with a slice of ham, or cut it into small pieces and sprinkle it on top.

We recommend preparing the soup the day before and keeping it in the refrigerator until ready to eat. This way, you can enjoy it completely cold and it will refresh you even more.

Also, remember that choosing a well-ripened melon improves the flavor of the soup infinitely, so make sure you have a fully ripe melon for this recipe; you'll notice it in its sweetness.

Salad with soft cheese

This salad is simple, but has a spectacular flavor, thanks to the combination of fresh ingredients that complement each other perfectly. It's one of our favorite summer recipes.

Ingredients:

  • 200 grams of arugula
  • 100 grams of soft cheese (fresh cheese, sheep's cheese, or feta)
  • 12-15 cherry tomatoes
  • 1 peach
  • 4 slices of ham
  • Extra virgin olive oil
  • Balsamic or apple cider vinegar
  • Salt and pepper to taste

Preparation:

  1. Prepare the ingredients: Wash the cherry tomatoes thoroughly and cut them into halves or quarters, as you prefer. Cut the soft cheese into small cubes or crumble it if it's fresh.
  2. Assemble the salad: In a large bowl, combine the tomatoes, soft cheese, and arugula. Meanwhile, cut the peach into thin slices.
  3. Toss the peach until it caramelizes slightly, then add it to the rest of the salad, along with the ham slices.
  4. Dressing: Drizzle everything with extra virgin olive oil and a touch of balsamic or apple cider vinegar. Season with salt and pepper to taste.
  5. Serving: Toss well to coat the ingredients in the dressing and serve immediately, or let it sit in the refrigerator for a few minutes to chill further.

This salad is perfect as a side dish for grilled meats or fish, or simply as a main dish if you're looking for something light and healthy.

Tuna Tartar with Mango

Our third summer recipe is a tuna tartar with avocado and mango, ideal for summer thanks to its freshness and tropical flavors.

Ingredients:

  • 250g tuna, good quality if possible; frozen tuna also works well.
  • 1 ripe avocado
  • 1 mango
  • Juice of 1 lime
  • 1 teaspoon soy sauce
  • A few drops of sesame oil (optional)
  • Salt and pepper to taste

Preparation:

  1. Prepare the ingredients: Cut the tuna into small cubes, the avocado into chunks, and the mango into small cubes. Try to make all the ingredients similar in size to achieve a uniform texture.
  2. Dressing: In a bowl, combine the tuna with the avocado and mango. Add the lime juice, soy sauce, and a few drops of sesame oil for an extra touch of flavor.
  3. Adjust the flavor: Season with salt and pepper to taste, and mix gently to combine the ingredients.
  4. Serving: Serve the tartar in glasses, small plates, or even using a cooking ring for a more sophisticated look.
