Our favorite recipe with pork belly

Here is a simple recipe to prepare grilled bacon:

Ingredients:

- 1 kg of pork belly

- Salt to taste

- Black pepper to taste

- 2 tablespoons of olive oil

Instructions:

1. Prepare the bacon: Wash the bacon under cold water and dry it with absorbent paper. If necessary, cut the bacon into smaller pieces so it cooks evenly.

2. Season the bacon: Sprinkle salt and black pepper on both sides of the bacon. You can adjust the amount of salt and pepper according to your personal preference.

3. Preheat the grill: Turn on the grill and let it heat to medium-high heat. If you are using a charcoal grill, make sure the coals are well lit and covered with ashes before placing the bacon.

4. Cooking: Brush the bacon with olive oil to prevent it from sticking to the grill. Place the bacon pieces on the hot grill and close the lid. Cook the pancetta for about 4-5 minutes on each side, turning once, until well browned and crispy.

5. Check for doneness: To make sure the bacon is cooked completely, you can make a small incision in the center of one of the pieces and check that the juices run clear. If the bacon still seems raw, let it cook for a few additional minutes.

6. Remove and Rest: Once the pancetta is cooked to your liking, remove it from the grill and let it rest for a few minutes before slicing. This will help the juices redistribute and keep the bacon juicy.

7. Cut and serve: Cut the pancetta into smaller slices or pieces and serve hot. You can accompany it with any sauce or dressing of your choice, as well as with salads or vegetable garnishes.

Enjoy your delicious grilled bacon!
