What is pork loin?

Pork loin is a lean, tender cut of meat obtained from the upper back of the pig. This piece is characterized by having very little fat and its soft and juicy texture. Pork loin can be presented in different ways, either whole or in fillets. It is usually a highly appreciated cut for its delicate flavor and for being very versatile in the kitchen, and can be cooked in various ways such as roasted, grilled, in grilled fillets, in stews, among others. It is an excellent source of high-quality protein, B vitamins and minerals such as iron and zinc. When cooking, it is recommended not to exceed the cooking time to prevent it from drying out, and it can also be marinated beforehand to add more flavor. Overall, pork loin is an excellent option for a healthy, balanced diet, and can be an attractive alternative to other fattier cuts of meat.

Our favorite recipe: pork loin with Roquefort

Here is a recipe to prepare pork loin with Roquefort sauce:

Ingredients:

1 pork loin of approximately 1 kg

Salt and pepper to taste

2 tablespoons olive oil

1 chopped onion

2 cloves of garlic, minced

200 ml meat broth

150 ml milk cream

100 g Roquefort cheese, crumbled

Chopped fresh parsley to decorate (optional)

Instructions:

Preheat the oven to 180°C (350°F).

Season the pork loin with salt and pepper on all sides.

Heat the olive oil in a large skillet over medium-high heat. Add the pork loin and sear each side for a few minutes until golden. Remove the pork tenderloin from the pan and place it on a baking sheet.

In the same pan, add the chopped onion and garlic and cook until golden and tender.

Add the beef broth to the pan and boil for a few minutes to reduce the liquid slightly. Then, add the heavy cream and crumbled Roquefort cheese. Mix well until the cheese is melted and the sauce is smooth and homogeneous.

Pour the sauce over the pork loin in the baking tray.

Bake for approximately 30-40 minutes, or until the pork tenderloin is cooked and reaches an internal temperature of 63-68°C (145-155°F), depending on your preference.

Remove the pork tenderloin from the oven and let it rest for a few minutes before slicing it.

Serve the sliced pork loin, bathed with Roquefort sauce. You can sprinkle some chopped fresh parsley on top to decorate.
