Escalivada is a traditional dish of Catalan cuisine that consists of roasted vegetables, generally over a fire or on a grill. Typical ingredients include red peppers, eggplant, onions and, in some variants, tomatoes. After roasting, the vegetables are peeled, cut into strips and dressed with olive oil, salt and sometimes garlic or vinegar. It is served cold or at room temperature, either as a main dish, accompaniment or as part of tapas.
