Ingredients:
-100 g of Iberian ham, chopped into small pieces
-50 g of butter
-1 small onion, finely chopped
-2 cloves of garlic, finely chopped
-100 g of flour
-500 ml of milk
-Salt to taste
-Black pepper to taste
-Nutmeg to taste
-Breadcrumbs
-Whisked egg
-Oil for fry
Instructions:
1. In a large skillet, melt the butter over medium heat. Add the chopped onion and garlic and cook until tender and translucent.
2. Add the chopped Iberian ham and cook it briefly to release its flavor. Stir well.
3. Add the flour and stir constantly for a few minutes to cook it and form a roux. The flour should be cooked enough to eliminate the raw taste.
4. Gradually add the milk while continuing to stir vigorously to avoid lumps forming. Cook the mixture over medium-low heat until it thickens and you get a creamy dough.
5. Season with salt, black pepper and nutmeg to taste. Remember to taste and adjust the seasonings according to your preference.
6. Remove the mixture from the heat and transfer it to a container. Cover the surface of the dough with plastic wrap, pressing it directly onto the dough to prevent a crust from forming. Refrigerate for at least 2 hours or until completely cold and firm.
7. Once the dough is cold, form small portions of dough into croquettes, using your hands or two spoons. You can make them any size you prefer.
8. Dip each croquette in beaten egg and then in breadcrumbs, making sure to cover them completely.
9. Heat enough oil in a deep frying pan or deep fryer over medium-high heat. Fry the croquettes in batches until golden brown and crispy on the outside. Remove them and place them on absorbent paper to remove excess oil.
