PREPARATION OF THE WHOLE SEMICURED CHEESE ALJIBE
The whole semi-cured cheese from the cistern is made with pasteurized sheep's milk. This cheese is made with sheep's milk from the Aljibe cheese farms.
With an average curing period of 2 to 4 months, these cheeses are ideal for pairing with red wines with a medium maturation, wines young or harvesters.
