Perretxicos pate is a type of pate or spreadable paste that is made mainly with perretxicos mushrooms (also known as perrechicos or senderuelas) along with other ingredients such as onion, garlic, oil olive, salt and pepper. Perretxicos are edible mushrooms highly appreciated in the gastronomy of northern Spain, especially in the regions of Navarra, the Basque Country and La Rioja. They have a mild and slightly sweet flavor, and their texture is tender and meaty. Perretxicos pâté is usually served as an appetizer or starter, accompanied by toast or crackers. It can also be used as an ingredient in other recipes, such as sauces or as a filling for empanadas or vol-au-vents.
