Borage is a herbaceous plant, which is grown in many places around the world for its edible leaves, flowers and seeds, as well as for its medicinal properties. Borage grows to a height of approximately 60-100 cm and has hairy stems with large, rough, bright green leaves. Borage flowers are blue or purple and star-shaped, and are very attractive to bees.
Both the leaves and flowers of borage are used in Mediterranean cuisine and can be prepared in a variety of ways, including in salads, soups, stews, teas, and pasta dishes. Borage is rich in nutrients, such as vitamin C, folic acid, calcium, iron and potassium.
