Borage is a herbaceous plant, grown in many parts of the world for its edible leaves, flowers, and seeds, as well as for its medicinal properties. Borage grows to a height of about 60-100 cm and has hairy stems with large, rough, glossy green leaves. Borage flowers are blue or purple and star-shaped, and are very attractive to bees.
Both the leaves and flowers of borage are used in Mediterranean cuisine and can be prepared in a variety of ways, including salads, soups, stews, teas, and pasta dishes. Borage is rich in nutrients, such as vitamin C, folate, calcium, iron, and potassium.
