Ingredients: Pasteurized sheep's milk, rennet, salt, hardener: calcium chloride (E-509), lactic ferments and preservative: egg-derived lysozyme (E-1105).

ELABORATION OF THE CURED CHEESE OF THE ALJIBE

The cistern cheese is made in Rodenas, a small town located in Teruel, next to one of the most beautiful castles in Spain, the Peracense castle.

This cheese is made with milk pasteurized from sheep, from their own farms that have the same cheese factory.

This cheese is a cured cheese with more than 4 months of healing. It is cured through traditional processes. It is a strong cheese, which combines very well with red wines, especially those that have matured quite a bit, including crianzas.
