What is La Cava de Mía cheese?
It is a sheep's cheese that is matured with a specific fungus (penicilium candidum), in a natural stone cellar on juniper wood shelves, at controlled and constant temperatures and humidity that help the growth of mold.
These conditions give the cheese a soft and slightly creamy texture, but with the intense flavor of sheep's cheese.
